Our Mostly Famous Mexican Rice

Have you ever noticed that you could tell a good Mexican restaurant by its rice? It’s not just a side dish, but a culinary masterpiece. From its red color to its tantalizing aroma, Mexican rice has become an essential part of any fiesta or gathering. Equipment

  1. Instant Pot
  2. Liquid Measuring Cup

Ingredients

  1. Rice
  2. Garlic
  3. Chicken broth
  4. Tomato Sauce
  5. Pico de Gallo Seasoning
  6. Oil

Directions

Drizzle some oil into the bottom of the Instant Pot, this will help it keep from sticking. Set the Instant Pot to sauté. Add in one cup of rice and stir.

In a large liquid measure cup, pour in 2 cups of chicken broth.

Add in the Pico de Gallo seasoning.

To make things easy, we add the tomato sauce to the broth. Now we have an easy way to pour everything in when we need to, but don’t do that yet.

When the Instant Pot is hot, throw in the garlic and stir. We need to cook the garlic to help release its flavor.

When we start to see some brown, then we will need to add in our liquids to keep the garlic from burning. Give it a quick stir and close it up. Set the Instant Pot to rice or 12 minutes.

When the Instant Pot is done you will have some beautiful looking rice.

We ate our Mostly Famous Mexican Rice with our Stuffed Enchilada Chicken Quesadilla.

Our Mostly Famous Mexican Rice

Equipment

  • 1 Liquid measure cup (It needs to measure 2 cups of liquid.)

Ingredients
  

  • 2 Cups Chicken Broth
  • 1 8 oz can Tomato Sauce
  • 1/4 tsp Pico De Gallo Seasoning
  • 2 tsp Minced Garlic
  • 1 Cup Rice
  • 1 Splash Oil

Instructions
 

  • Add a splash of oil to the Instant Pot.
  • Set the Instant Pot to Saute.
  • Add rice to the Instant Pot
  • Combine the Chicken broth, Pico De Gallo Seasong, and tomato sauce in liquid measure cup.
  • When the Instant Pot is hot, add the garlic and stir.
  • When the garlic start to brown, but before it burns, add the chicken broth mixture.
  • Stir to combine, and close the Instant Pot.
  • Set the Instant Pot to Rice or 12 Minutes pressure cook.
  • When the timer goes off, perform a quick release on the Instant Pot.
  • The rice will look soupy when complete. Give it a quick stir and let it sit for a minute or two. It will come together and be ready to serve.
