I suppose you could do this without a Vegetable Steamer Basket, but I don’t know how.

Put the Steamer in your Instant Pot Liner and add a cup of water.

Cut the potatoes into small bite-sized pieces, and place them in the basket.

Here is a time-saving tip. Add your eggs right along with your potatoes. They will cook up at the same time. Set the timer to 4 minutes.

Do a quick release, take everything out, and get it into the fridge to cool down. If you don’t cool down the potatoes, they will turn to mush.

When everything has had a chance to cool, peel and mash the eggs in a bowl.

Throw the eggs in with the potatoes.

Add in all the spices and mayo. Stir to combine.

Add in the veggies and bacon bits. Stir again to combine.

Enjoy! This is a great spring and summer side. Lubby will eat it by itself for lunch!

- 3 lbs Red Potatoes
- 2 Eggs
- 1 cup Chopped Celery
- 2 Tbsp Cut Green Onions
- 1 tsp Lawyer's
- 2 tsp Mrs. Dash (Yellow bottle – Original Blend)
- 2 tsp Garlic Powder
- 2 Tbsp Mayonnaise
- Bacon Bit Hardy Sprinkle – Last or it goes soggy!
Instructions
- Dice potatoes.
- Add 1 cup of water to the Instant Pot. Add the Vegetable Steamer Basket, Potatoes, and Eggs. Pressure cook for 4 minutes and perform a Quick Release.
- Place everything in the fridge and allow to cool for several hours. The potatoes should be cool to the touch.
- Peel and mash the eggs up in a bowl.
- Add the mashed eggs to the potatoes.
- Add all of the spices and mayonnaise. Stir to combine.
- Add the green onions and celery. Stir to combine.
- Before serving add the bacon bits to help keep them crunchy.
