Directions for Homemade Pasta
Before you do anything, get the water started on the stove! I can’t tell you how many times I’ve forgotten to get the water going first. It takes a long time to get a large body of water boiling! Learn from my mistakes.
Measure out the eggs in a liquid measuring cup. Ours happens to have mL marks which makes this more precise. You want to have ~210 mL liquids of eggs. Or about 7/8 of a cup. (Good Luck with that!)
Add water until you get to that magical number of 210mL (7/8 of a cup).
Add flour to the bowl.
Add salt.
Mix in the eggs (+ water) and water.
Mix it for about 10-20 seconds (Speed 2) and if it looks like this, then add in water. I tend to have a bowl with water next to the mixer and add 1 tablespoon at a time. Mix it for another 10-20 seconds and add more water.
Until you see the dough start to clump together like this.
Here is another picture. I find that this is the part that most people mess up. They add too much water or not enough.
Put on the dough hook and mix for 2 minutes on Speed 2.
It should start to form a big dough log. Push it down when it looks like this.
After the 2 minutes are up, take the dough out and let it rest for 20 Minutes.
When the 20 minutes are up, divide it into four chunks and flatten them a little bit.
Connect up the flat roller and set it to one.
Gradually step through the settings until you get to the desired pasta thickness. We usually go to setting 5, since we eat mostly fettuccine and spaghetti.
You should end up with long strips of pasta sheets. Don’t forget to put some flour down to keep the pasta from sticking to your counters.
Because these pasta sheets would make very long noodles, we cut them down to a manageable size.
Connect the spaghetti cutter or fettuccine cutter to the Kitchen Aid. We are having fettuccine, so that is what we hooked up. We like to have the children grab the noodles as they are coming out.
You should end up with a bunch of pasta! The children threw them down in a hot mess, but you get the idea.
Throw all the pasta into boiling water. (You did get it going already, right?)
When it all starts to float to the top it should be ready to go. Strain out the liquids (the water can be saved) and enjoy your homemade pasta!
We like to eat our fettuccine with ham. We added some broccoli to help round out the meal.
Until next time,
Hubby
