Fluffy and Soft Mashed Potatoes
During the cold winter months, mashed potatoes are a comforting and essential part of our household meals. We enjoy them with a variety of accompaniments, including rich gravy, flavorful sauces, and sometimes simply on their own. The ideal consistency for us is fluffy and light, making each bite a delightful experience. There’s something truly special about the way soft, creamy potatoes melt in your mouth, evoking feelings of warmth and contentment that are unmatched by any other dish. The familiar aroma of mashed potatoes cooking warms our hearts and signals the arrival of a cozy, satisfying meal ahead. It’s an undeniable pleasure to indulge in this simple yet deeply gratifying comfort food during the chilly season.

Directions for Mashed Potatoes
This is the hard part, peeling potatoes. If you know a way to make this easy, then we’d love to hear from you!
Put 1 cup of water and 1 tsp of salt in the Instant Pot, then place in a trivet.
Place all of your nicely peeled potatoes into the pot.
Set the Instant Pot to pressure cook for 30 minutes.
When the timer goes off, do a quick release and you should have some perfect potatoes for mashing.
Remove the trivet, but keep the water and salt. If you have a trivet without handles, then we have a trick for you. Use a fork to grab the trivet and lift it out.
Add the butter. We like to smash it around to get the butter all incorporated.
Add a heaping tablespoon of sour cream and mash.
And add a splash of milk. The more milk you add the thinner the mashed potatoes will get. We tend to add a little at a time until the consistency looks right. Keep mashing!
When you are done mashing, and the consistency is how you like it, then you should have beautiful mashed potatoes!
We ate mashed potatoes with Brussels sprouts and chicken.
Until next time,
Hubby
