Cut the onion and bell pepper into slices.
Cut the cabbage and put to the side with the sliced onions and bell peppers.
In a large pot, cook the sausage while breaking it apart into small pieces.
Dump of excess oil, for a sligthly heathlier version or skip this step.
Add the onion, bell peppers, and cabbage to the pot.
Add in the oil and seasoning. Stir to combine.
Cover and simmer, while stirring occasionally.
